White Corn Tortilla Taco Recipe-Easy, Healthy Budget Meals

Welcome to week 2 of Easy, Healthy Budget Meals!
I do not claim to be a fancy food or recipe blogger by any means. In fact, I don’t even love to cook!
These are just the quick and easy recipes that we make every day.
Meal planning keeps us on budget, and gets dinner on the table without having to rely on the drive thru!
We are both working parents with three kids (1, 3, and 5), so the dinner time struggle is REAL.
I like to keep things simple, quick, and healthy.
This week we are making TACOS! Too bad it’s not Tuesday…

Easy Healthy Budget Meals Week 2: White Corn Taco Recipe
White Corn Tortilla Tacos
Easy as one, two, three! This recipe is a Friday night favorite. We usually save the leftovers for lunch on Saturday.
Serves: Makes 8 Tacos (2 tacos per person)
Calories: 363 per serving (we serve with a side of Frozen Sweet Corn for an additional 101 calories per 2/3 cup)
Time to cook: 20 minutes
Kid friendly?: We always offer, but my kids are more interested in eating the cheese and tortillas!
White Corn Tortillas (we love this huge bag from Kroger, lasts forever!)
1 pound ground beef (we use Costco 88/12% lean ground beef)
Taco Seasoning (1/2 to 1 packet, depending on your love of spice!)
1 cup fresh, chopped Cilantro
Red onion slices
1/8 cup Mexican shredded cheese per taco
Tip: You can add any toppings you please, but this will add calories and cost to your dish of course!
Step 1– Brown meat over medium heat, drain.
Step 2– Add taco seasoning and 2/3 cup water to meat. Heat until boiling. Reduce heat and simmer approximately 10 minutes.
Step 3– Toss in 1 cup freshly chopped Cilantro and stir.
Step 4– Warm white corn tortillas in microwave or oven. Fill each tortilla with approximately 1/8 of taco meat.
Step 5– Top with red onions, cheese, and any other desired toppings. Serve with a side of frozen sweet corn.
We like to serve frozen veggies on the side, because it’s so quick and easy!
